Banana Oatmeal Cookies

- 2 medium ripe bananas mashed
- 1 cup of uncooked quick oats*
- 1/4 cup crushed walnuts
Preheat the oven to 350°F (175°C). Lightly spray a non-stick cookie sheet with cooking spray or use a silicone baking mat.
Mash the bananas in a mixing bowl using a fork or potato masher until smooth.
Combine the ingredients: Add oats to the mashed bananas and stir until fully mixed. Fold in the crushed walnuts.
Scoop and shape: Drop tablespoon-sized scoops of dough onto the prepared cookie sheet. Flatten slightly with the back of a spoon.
Bake for 15 minutes or until the edges are lightly golden.
Cool and serve: Let the cookies rest on a cooling rack before enjoying.
