Cauliflower Rice with Garlic and Lemon

- 16 oz riced cauliflower store-bought or homemade – see tip below
- 1 tablespoon olive oil
- 3 cloves garlic chopped
- 1/2 teaspoon kosher salt
- 2 teaspoons fresh chopped parsley
- 1 teaspoon fresh lemon juice
Rice the cauliflower:
Cut the cauliflower into florets, then pulse it in batches in a food processor until it resembles rice. Don’t over-process or it will turn mushy.
Preheat your oven:
Set your oven to 425°F and spray a large baking sheet with oil.
Mix the ingredients:
