Ingredients
  

  • 16 oz riced cauliflower store-bought or homemade – see tip below
  • 1 tablespoon olive oil
  • 3 cloves garlic chopped
  • 1/2 teaspoon kosher salt
  • 2 teaspoons fresh chopped parsley
  • 1 teaspoon fresh lemon juice

Instructions
 

  • Rice the cauliflower:
  • Cut the cauliflower into florets, then pulse it in batches in a food processor until it resembles rice. Don’t over-process or it will turn mushy.
  • Preheat your oven:
  • Set your oven to 425°F and spray a large baking sheet with oil.
  • Mix the ingredients:
  • In a large bowl, combine the riced cauliflower with olive oil, chopped garlic, and salt.
  • Roast until golden:
  • Spread the cauliflower mixture in an even layer on the baking sheet. Roast for 25 minutes, stirring halfway through.
  • Finish with fresh flavor:
  • Once roasted, remove the cauliflower from the oven. Drizzle with lemon juice and sprinkle with parsley before serving.
