This Cowboy Caviar comes together quickly, making it a great option for last-minute gatherings or as a nutritious snack during the week. The recipe is also easily customizable depending on your preferred spice level or available ingredients.

Ingredients
  

  • cup olive oil
  • 2 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

Instructions
 

  • Prepare the Veggies and Beans
  • In a large bowl, combine the diced tomatoes, avocados, red onion, black beans, black-eyed peas, corn, bell pepper, jalapeño, and fresh cilantro. Toss everything together gently so that the ingredients are evenly combined.
  • Prepare the Dressing
  • In a separate bowl, whisk together the olive oil, lime juice, red wine vinegar, granulated sugar, salt, black pepper, and garlic powder. Make sure everything is well combined and the sugar has dissolved.
  • Toss Everything Together
  • Pour the dressing over the vegetable and bean mixture. Toss well to ensure the dressing coats all the ingredients evenly.
  • Refrigerate
  • Keep the Cowboy Caviar refrigerated until ready to serve. If not serving immediately, be sure to stir or toss it well before serving to ensure the dressing is evenly distributed.
