Energy Bites with Oats and Peanut Butter

Ingredients
  

  • ¾ cup chopped Medjool dates
  • ½ cup rolled oats
  • ¼ cup natural peanut butter
  • Chia seeds for garnish

Instructions
 

  • Soak the Dates
  • Place the chopped Medjool dates in a small bowl of hot water and let them soak for 5 to 10 minutes. Drain the water after soaking.
  • Process the Ingredients
  • Combine the soaked dates, rolled oats, and peanut butter in a food processor. Process until the mixture is very finely chopped and well combined.
  • Form the Energy Bites
  • Roll the mixture into 12 bite-sized balls, using about a scant tablespoon for each. If you prefer, you can garnish each ball with a sprinkle of chia seeds for extra texture and nutrients.
  • Chill and Serve
  • Refrigerate the energy bites for at least 15 minutes to allow them to firm up. You can store them in an airtight container for up to 1 week.
