Energy Bites with Oats and Peanut Butter

- ¾ cup chopped Medjool dates
- ½ cup rolled oats
- ¼ cup natural peanut butter
- Chia seeds for garnish
Soak the Dates
Place the chopped Medjool dates in a small bowl of hot water and let them soak for 5 to 10 minutes. Drain the water after soaking.
Process the Ingredients
Combine the soaked dates, rolled oats, and peanut butter in a food processor. Process until the mixture is very finely chopped and well combined.
Form the Energy Bites
Roll the mixture into 12 bite-sized balls, using about a scant tablespoon for each. If you prefer, you can garnish each ball with a sprinkle of chia seeds for extra texture and nutrients.
Chill and Serve
Refrigerate the energy bites for at least 15 minutes to allow them to firm up. You can store them in an airtight container for up to 1 week.
