This Grilled Shrimp Louie Salad is simple to prepare and a great option for those who want a healthy, satisfying meal in a short amount of time. It’s also a great choice for meal prepping for the week ahead!

Ingredients
  

  • 16 ounces large raw shrimp thawed if frozen, peeled and deveined
  • 1.5 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon freshly ground black pepper or to taste
  • 6 ounces spring lettuce or your favorite greens
  • 2 oven roasted beets sliced (substitute with pre-cooked beets)
  • 4 large hard-boiled eggs
  • 2 cups cherry tomatoes halved
  • 1 avocado pitted and sliced
  • 1 cup black olives drained
  • Louie Salad Dressing
  • Fresh lemon wedges for serving (optional)

Instructions
 

  • Prepare the Shrimp
  • Preheat your grill to medium. Place the shrimp in a large bowl and toss with olive oil. In a small bowl, combine smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the spice mixture to the shrimp and toss well to coat.
  • Grill the Shrimp
  • Place the seasoned shrimp on large metal skewers. Grill for 2-3 minutes per side, or until the shrimp turn pink and are cooked through. Remove from heat and allow the shrimp to cool slightly before removing them from the skewers.
  • Assemble the Salad
  • Divide the spring lettuce, beets, hard-boiled eggs, cherry tomatoes, avocado, and black olives between 4 large plates. Top each salad with grilled shrimp.
  • Drizzle with Dressing
  • Drizzle the desired amount of Louie salad dressing over the salad. Serve with lemon wedges for added freshness, and enjoy immediately!
