Healthy Banana Oatmeal Breakfast Cookies

Ingredients
  

  • 2 medium ripe bananas mashed
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 2 tablespoons oat flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup raisins

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a blender or with a hand mixer, blend bananas, applesauce, honey, and vanilla until smooth.
  • In a medium bowl, combine rolled oats, oat flour, cinnamon, baking powder, and salt.
  • Pour the banana mixture into the oat mixture and stir well to combine. Fold in the raisins.
  • Using a small cookie scoop, drop 1-inch balls of dough onto the baking sheet. Flatten the tops slightly with the back of a spoon.
  • Bake for 15 to 20 minutes until the cookies turn golden and set.
  • Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy!
