  • 1 block 8 oz neufchatel cheese (1/3 less fat cream cheese)
  • 1/2 cup plain Greek yogurt
  • 1/4 cup honey
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 pinch of salt

  • Fresh or warmed blueberries
  • Additional fresh berries

  • Prepare Your Workspace: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
  • Create the Crust: Process graham crackers in a food processor until finely ground, then mix with melted butter until well combined.
  • Form Crust Base: Divide the graham cracker mixture evenly among the muffin cups, pressing firmly to create a solid base.
  • Pre-bake the Crust: Bake for 6 minutes until lightly golden and fragrant.
  • Prepare the Filling: In a clean food processor, combine neufchatel cheese, Greek yogurt, honey, egg, vanilla, and salt. Blend until completely smooth.
  • Fill and Bake: Divide the filling evenly among the prepared crusts and bake for 17-20 minutes until set but still slightly jiggly in the center.
  • Cool Properly: Allow to cool for 15 minutes at room temperature, then refrigerate for at least 2 hours before serving.
