Preheat the oven:
Preheat your oven to 375°F (190°C). Grease a small 11x7 baking dish or line it with parchment paper for easy cleanup.
Prepare the dough:
In a large bowl, combine the self-rising flour, Greek yogurt, honey, fresh herbs, and salt. Use a spatula (or a stand mixer with a dough hook attachment) to mix until the dough forms. If the dough is too sticky, gradually add a bit more flour until it’s easy to handle.
Knead the dough:
Turn the dough onto a floured surface. Dust your hands with flour to prevent sticking, then knead the dough a few times until it forms a smooth ball.
Shape the rolls:
Cut the dough into 12 equal sections using a dough cutter or knife. Roll each section into a ball and place them into the prepared baking dish. Make sure they’re just touching to create pull-apart rolls.
Bake the rolls:
Place the dish in the oven and bake for 30 to 35 minutes (mine took 32 minutes), or until the tops are golden brown and the rolls are cooked through.
Prepare the honey butter:
While the rolls bake, whisk together the melted butter, honey, and fresh herbs in a small bowl.
Finish the rolls:
Once the rolls are done, brush the warm honey butter mixture over the tops of the rolls. If you like, sprinkle with flaky sea salt for an added burst of flavor.
Serve:
Pull apart the rolls and enjoy them warm as the perfect complement to your meal.
