Ingredients
  

  • 2 apples cored and sliced into 8 rings
  • 1/4 cup all-natural peanut butter
  • 1 cup cinnamon-pecan granola see recipe below
  • For the Cinnamon-Pecan Granola:
  • 1 cup rolled oats
  • 1/2 cup pecans finely chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil melted
  • 1/2 teaspoon ground cinnamon
  • Mini chocolate chips optional

Instructions
 

  • Make the granola:
  • Preheat the oven to 325°F. In a large bowl, mix the rolled oats, chopped pecans, maple syrup, melted coconut oil, and cinnamon until well combined.
  • Spread the mixture evenly on a baking sheet lined with parchment paper.
  • Bake at 325°F for 25–30 minutes, stirring halfway through, until golden brown.
  • Let the granola cool completely on the baking sheet. If desired, sprinkle in mini chocolate chips while the granola is still slightly warm so they can melt into the mixture.
  • Prepare the apple rings:
  • Core the apples and slice them into 8 even rings, discarding the core and seeds.
  • Drizzle with peanut butter:
  • Place peanut butter in a microwave-safe bowl and heat for 20–30 seconds until smooth and drippy.
  • Drizzle the peanut butter over each apple ring.
  • Top with granola:
  • Sprinkle the cooled cinnamon-pecan granola over the peanut butter drizzle.
  • Enjoy!
  • These apple rings are best enjoyed immediately, but you can store them in an airtight container for a few hours if needed.
