Make the granola:
Preheat the oven to 325°F. In a large bowl, mix the rolled oats, chopped pecans, maple syrup, melted coconut oil, and cinnamon until well combined.
Spread the mixture evenly on a baking sheet lined with parchment paper.
Bake at 325°F for 25–30 minutes, stirring halfway through, until golden brown.
Let the granola cool completely on the baking sheet. If desired, sprinkle in mini chocolate chips while the granola is still slightly warm so they can melt into the mixture.
Prepare the apple rings:
Core the apples and slice them into 8 even rings, discarding the core and seeds.
Drizzle with peanut butter:
Place peanut butter in a microwave-safe bowl and heat for 20–30 seconds until smooth and drippy.
Drizzle the peanut butter over each apple ring.
Top with granola:
Sprinkle the cooled cinnamon-pecan granola over the peanut butter drizzle.
