- Fajita Seasoning:
- 1 Tbsp chili powder
- 1/2 Tbsp paprika
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cumin
- 1/8 tsp cayenne pepper
- 1 tsp sugar
- 1/2 tsp salt
- Fajitas:
- 2 small yellow onions or one large
- 3 bell peppers any colors you like
- 1 lb. chicken breast
- 2 Tbsp cooking oil
- 1 lime
- 8 6- inch tortillas whole grain or low-carb, if desired
- 1/2 cup sour cream optional
- 1/4 bunch cilantro optional
Preheat your oven to 400ºF and mix all fajita spices in a small bowl.
Slice onions, bell peppers, and chicken into thin strips.
Place chicken and veggies on a large baking sheet.
Drizzle with oil, sprinkle with seasoning, and toss everything to coat evenly.
Spread the mixture in a single layer across the pan.
Bake for 35–40 minutes, stirring once halfway through for even cooking.
Once done, squeeze lime juice over everything for a burst of freshness.
