Vegan BBQ Jackfruit Sliders

Ingredients
  

  • For the Jackfruit BBQ Filling:
  • 1 20 oz can jackfruit in water, drained and rinsed
  • 1 small onion diced
  • 2 tbsp avocado oil
  • 1 garlic clove minced
  • 1 tbsp chili powder
  • 1 tbsp coconut sugar or brown sugar
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp liquid smoke optional
  • 1 cup BBQ sauce
  • Salt and pepper to taste
  • For the Slaw:
  • 1 11 oz bag broccoli, Brussels sprouts, and kale slaw mix (or slaw of choice)
  • 1/2 cup vegan mayo or less
  • 1 tbsp apple cider vinegar
  • 3 tbsp maple syrup adjust for sweetness
  • Salt and pepper to taste
  • For Serving:
  • 12 small dinner rolls or Hawaiian rolls
  • Pickles
  • Hot sauce optional

Instructions
 

  • Prepare the jackfruit: Drain, rinse, and gently massage the jackfruit pieces to shred them slightly.
  • Cook the onion: In a medium saucepan, heat avocado oil over medium heat. Add diced onion and cook until translucent, about 5-6 minutes.
  • Add jackfruit and spices: Stir in the jackfruit, garlic, chili powder, coconut sugar, paprika, cumin, and liquid smoke. Stir regularly to avoid sticking; if it dries out, add a splash of water. Cook for about 15 minutes.
  • Add BBQ sauce: Pour in the BBQ sauce, reduce heat, and let it simmer for 10-15 minutes until the jackfruit is tender and easily shreddable. Mash it with a fork for a pulled texture.
  • Prepare the slaw: In a large bowl, mix the slaw ingredients until fully combined and creamy.
  • Assemble the sliders: Scoop BBQ jackfruit onto rolls, top with slaw, pickles, and a dash of hot sauce if desired. Enjoy immediately!
