Blend the Watermelon and Lime
Add the watermelon chunks and lime juice to a blender or food processor. Blend until smooth, about 15 seconds.
Strain the Mixture
Strain the blended mixture through a fine mesh strainer into a bowl to remove any watermelon seeds. This step ensures a smooth, seed-free popsicle base.
Add the Mint
Stir in the finely diced mint leaves to infuse the mixture with fresh mint flavor.
Fill the Popsicle Molds
Pour the mixture evenly into 8 popsicle molds. Make sure the molds are filled just to the top to get perfectly shaped popsicles.
Freeze Partially and Insert Sticks
Place the filled molds into the freezer and freeze for about 1 to 2 hours, or until the mixture is slightly firm (check after one hour). This will ensure the popsicle sticks don’t slide around. Insert the popsicle sticks into the center of each mold when the mixture is firm enough to hold them in place.
Freeze Until Firm
Return the molds to the freezer and freeze until fully firm, about 4 to 6 hours.
Remove and Enjoy
When ready to serve, remove the popsicles from the molds. Let them sit on the counter for about 5 minutes to help them release from the molds easily. Serve and enjoy!
