300g/3 cups fresh watermelon cubes

Juice of 2 fresh lemons

2 teaspoons honey

Fresh mint leaves for garnish

Ice cubes for serving

Prepare the Watermelon: Select ripe, sweet watermelon chunks, ensuring they're free from seeds.

    Blend the Base: Combine watermelon cubes, fresh lemon juice, and honey in a blender.

      Process Until Smooth: Blend until the mixture achieves a smooth, consistent texture.

        Strain the Mixture: Pour through a fine-mesh strainer to remove pulp and any seeds.

          Add Sparkle: Gently stir in the chilled sparkling water until well combined.

            Serve: Pour over ice, garnish with fresh mint leaves and watermelon wedges.
